Industrial refrigeration aims to preserve food at low temperatures to extend its shelf life and freshness. This process, designed for large-scale operations, is mainly used in large cold storage rooms for refrigerating or freezing food and other products. In the cold rooms, temperatures are maintained just above 0°C. For freezing, temperatures are typically around -20°C. There are also specific systems for quick freezing or rapid temperature reduction, which can reach as low as -40°C. The machines used in these applications include refrigeration plants and large condensing units connected to industrial air evaporators installed inside cold storage rooms.
